Mofongo, Mo' Om Nom Nom
Sep. 8th, 2009 05:16 pmThis was actually an incredibly busy weekend! A college friend of mine is dating a guy whose family is from my city, so they came up here for the Labor Day weekend. I ended up going out with them on both Saturday and Sunday evening, and it was a blast. So nice to relax with friends, have some mojitos, some pisco sours, some guacamole.... let's just say, my WW weekly points are gone bye-bye! And I can't think of a better use of them.
Sunday morning, DBF and I went on a big hike, which was very nice. Yesterday, I mostly stuck close to home and took care of some chores and stuff that have been bothering me. Mostly moving some crap down into the basement for storage. I also cleared out the big hallway closet so we can start using that for some of our clothes.
I made some baked spring rolls last night, and I thought they turned out pretty good. Today, however, after getting done with working from home, I made mofongo de camarones, a Puerto Rican dish that I adore. It involves fried plantains, oodles of garlic, and shrimp. Yummmm. I'd never made it before, but I thought it turned out great, so I was pretty proud of myself. Right now, though, I am stuffed!! Glad all I had earlier was a green salad. I may have another one later on.
I'm looking forward to getting back into the office tomorrow. I really do love my new office, it's so inspiring to get lots of work done.
